Chef Alessandro Basciu, after years of experience in the best oriental and fusion restaurants, decided to put his idea of ββcooking into practice and thus tell what can be defined as an unconventional experience, a journey through flavors and authenticity. π£π To prepare sushi we only use ORIGINAL rice grown in the Vercelli area, an ancient variety selected in Italy in the early twentieth century, whose characteristics - pearly colour, rounded shape and crunchy consistency - blend perfectly with our raw materials. πβ¨ The treated fish is of safe origin and traceability, and is killed on site or at the source according to current CE852/2004 regulations at -20Β°C for 24 hours, to protect the health of the consumer and guarantee constant freshness of the raw material, 100% NATURAL (without glazing, without gas and without colourants). πβοΈπ«
