The story of Ajitama ๐ began in late 2015, with two long-time friends, Antรณnio Carvalhรฃo and Joรฃo Azevedo Ferreira ๐ฌ, who had lived in Asia ๐ and spent a lot of time in Japan ๐ฏ๐ต, where they ended up falling in love โค๏ธ with the most popular dish in Japan: Ramen ๐. When they arrived in Portugal ๐ต๐น, they had no way of enjoying their favourite dish, and in order to satisfy their craving, they embarked on a 13-month self-taught journey ๐๐จโ๐ณ, which ended when they managed to develop a recipe for a Ramen that reminded them of their original experiences in Japan ๐ฏ๐ต. The next step was the opening of a Supper Club at Antรณnio's house ๐ where, for a year and a half, they prepared their Ramen for hundreds of people, every Saturday night ๐๐ฒ. Faced with an increasingly demanding waiting list ๐, they decided it was time to open their own restaurant, Ajitama Ramen Bistro ๐ฎ๐, and expand their ramen offering, having taken a Ramen Chef course at the best school in Tokyo, Rajuku ๐, led by sensei Takeshi Koitani ๐จโ๐ซ. With their baggage full of new Japanese trends ๐๐ฏ๐ต, they wanted the restaurant space to be emblematic, to transport people to Japan ๐๐ฏ๐ต and to creatively represent their favourite topping: the Ajitama egg ๐ฅ๐จ. The wooden shapes present in the place display artistic interpretations of the eggs with architectural features of traditional and urban Japan ๐ฏ๐.
